When I got married, I was worried about being able to cook. I felt that I knew my way around a kitchen, but I have always been one who wants to be good at cooking. Our first year of marriage, all I cooked were things from the scrapbook recipe book that I got from JB's mom as a wedding gift. They were delicious meals but we ate them all the time. I started looking for recipe books that had meals that we liked. I cam across a book at the book fair at my school. I found a recipe for "Linguine Carbonara" that looked yummy. So, to make a long story long, I made it, it was a big hit, and became our favorite meal. We cook it frequently and change it up to meet our "low carb" diet that we loosely follow now.
Here it is (with my "enhancements"):
Ingredients
1 package of Bacon - chopped
1 sweet onion - chopped into small pieces**
4 cloves of garlic - crushed
2 tablespoons of basil
2 tablespoons of oregano
2 tablespoons of plain flour
1 1/2 cups of milk
1/4 cup of sour cream
Parmesan Cheese to taste
1 package of pasta noodles (we have used rotini, bowtie, linguine, etc.)***
**I subbed this instead of a red onion and yellow onion.
***For my "low carb" substitute, instead of pasta, I used baked chicken.
Directions
1. Cook the bacon, drain, set aside
2. Carmalize the onions. (med-hi heat)
3. Add the garlic - cook for about 2 minutes. (med-hi heat)
4. Add the basil and oregano - cook for about 1 minute. (med-low heat)
5. Add the flour and coat the mixture. (med-low heat)
6. Slowly add the milk and stir.
7. Add the bacon and continue to stir.
8. Stir until the sauce thickens.
9. When sauce thickens, add the sour cream and Parmesan cheese.
10. Add to cooked noodles and serve or serve over chicken.
